crazy coupon lady

Yesterday was a crazy day.

I taught summer school from 7-4, quickly ran a few errands from 4-5:30, tutored at my school from 5:30-7:30, ate dinner at my parents house then finally went to the grocery store at 8:30.

First of all, I never grocery shop that late.  Second, I never grocery shop on Tuesday (the last day of the sales).  And lastly, I was already stress from a crazy day.  I had my list though and I was all prepared to snag a few deals really quick.  

I quickly learned why I don't wait until Tuesday night to grocery shop, because all the things I was going to get for free were completely sold out.  Obviously this frustrated me and it took me a little while to re-vamp my shopping list since the sale was "Buy 10 participating items Get $5 off".

About an hour later, I had all my stuff ready to buy.  I got up the cashier and realized I couldn't find my little zip-loc baggie of coupons. I instantly freaked out.  I almost started crying, but I calmed myself down.  I had to tell myself that "it's only coupons and it's really not a big deal".  I literally searched every aisle up and down.  People looking at me probably thought I was searching frantically for a lost child or something.  After no luck finding it in the aisles, I really almost lost it.  I mean it really was like a bag of money.  I didn't give up though.  I started to look closely in all the areas that I shopped in and I finally found my baggie of coupons hanging out with the cheese.  I had set them down in the refrigerator box while comparing two items and left them there.  I'm so thankful that no one stole them because my $84 grocery bill went down to $32 because of those coupons.  

I really felt like the  crazy coupon lady after that grocery shopping trip!!

summer school

Nine hours (7am-4pm) of summer school summer school is just wrong. 

You know is too long when kids are falling asleep all throughout the day.
It's just pitiful. 

At one point I had 6 of my 12 kids passed out on the floor.
Only 8 more days of these crazy long summer school days!!

When real school starts, I will definitely appreciate my 7:30-2:30 days!!

As you can tell, last night we went to the Ranger's game with our ABF.

It was a sellout crowd with over 46,00 people there.  It was such a fun game to be at.  Unfortunately we got there a few minutes late and missed the only run scored.  Michael Young hit a home run in the first inning as we were walking to the ballpark. After the game they did a fabulous fireworks show set to Broadway songs.  It was seriously the best firework show I have ever seen.  

What a fun night!! I hope we can make it back out to Arlington for atleast one more game this season!!

i don't feel like blogging....

I don't feel like blogging because I am absolutely POOPED/EXHAUSTED/TIRED.
My brain is like mush.

I'm teaching Kindergarten summer school from 7am-4pm.  

You read that right 7am-4pm.  

I'm with a class of 13 six year olds from 7am-4pm.  That shouldn't be allowed. 

If I'm tired at the end of the day, you know my kids are tired at the end of the day.

Oh well, I'll get over it.  The money is great and I'll be thankful I did it when I get my extra money on top of my normal paycheck!!

Atleast I had a few funny moments to get me through the day.

I had a little (Asian) boy tell me today that he knew how to count in Chinese.

See what I mean 7am-4pm is even making the kiddos brain's like mush.

chicken pot pie

 Matt absolutely loves Chicken Pot Pie.  

This recipe hit the spot not only for Matt, but for me too!!  The best thing about Chicken Pot Pie is that you don't have to make anything to go with it.  It's your meat, bread and vegetable all in one dish!!

Here's what you'll need....
Pie Crust
Frozen bag of carrots, onions, & celery
{You are more than welcome to cut up fresh veggies, but Kroger has them all in one bag for 88¢}
1/2 cup of frozen peas
2 cups of cooked shredded chicken
1 cup of flour
2 cups of chicken broth
1 chicken bouillon cube
1 cup of heavy cream
1 teaspoon ground thyme
1 teaspoon of kosher salt
Pepper to taste

Preheat the oven to 400 degrees.

Melt the butter in a large pan.  Add the cut veggies and cook over a medium heat until translucent.

Add the chicken and sprinkle the flour on top.  Stir to combine and cook for a few minutes.

Pour in the chicken broth, add the bouillon cube and stir until bouillon cube is melted.

Add the heavy cream and stir.  Cook the mixture over a low, thickening gradually, for 4-5 minutes.  Season with the thyme, salt, and pepper.

Pour the mixture into a glass pie pan.

Lay the crust on top of the mixture.  Press the crust onto the edge of the pie pan and cut a few slices in the middle of the crust. 

Bake for 30 minutes or until golden brown on top.  

Dig in!!

uncle matt

This weekend while we were at the lake, I got to hear Carson say "Matt" for the first time.  He said it quite a bit actually.  He obviously says "Mommy" & "Daddy", but he can't say anybody else's name in the family on his own.  If I tell him to say "Katy" he'll say it, but he says "Matt" all on his own.  It is too cute to hear him say "Matt"!! He must really love his Uncle Matt!! I would too, if I were him.  Matt is going to be such a great Daddy someday, I just can't wait!!

family vaca

We just got back from a wonderful family vacation to Hot Springs, Arkansas.  My entire family stayed in a lake house right on Lake Hamilton for the weekend.  We hung out, played some games, wakeboarded, cruised around the lake, went to a Bathhouse for a mineral bath and massage, and also celebrated Carson's 2nd birthday! Here are a few pictures from our weekend with the family.

lemon whippersnappers

I learned to make these cookies when I was in Junior High.  I used to love to make them when my friends came over.  These cookies are so easy, so soft and so yummy.  The best part is that there are only 4 ingredients!! 
1 pkg. lemon cake mix
{or any flavored cake mix}
1 tub of cool whip
1 egg
1/2 cup of powdered sugar

Preheat the oven to 350 degrees.  Grease cookie sheets. 
Combine the cake mix, cool whip, and egg together in a large bowl.  Stir until mixed well. 
Form the dough into small balls and roll around in powdered sugar.

Place 12 cookie dough balls on the greased cookie sheet and bake at 350 degrees for 10-15 minutes or until golden brown.

After they bake, let them cool before eating.  
Eat 1, 2, 3 or even 4!!  They are kind of addiciting!!

puppy love

Yesterday I had to go back up to the vet to get some vitamins for Izzie.  While I was waiting in line this man walked in with the cutest dog ever.  I immediately asked him if it was a malti-poo, because he looked just like Izzie did when she was a puppy.  He was a little malti-poo and his name was Barley.  He was the cutest thing ever!!  His owner let me hold him and love on him for a good 15 minutes.  It kind of gave me puppy fever {along with the baby fever I'm already starting to get}!! When I got home I just had to look at Izzie's puppy pictures.  She was so darn cute when was a puppy, I just had to share some pictures of my Izzie girl!!
