a "souper" night for soup

I think soup just tastes better when it's cold.

I made Tortilla Soup last night and it tasted so good to me. I had it for lunch today too, and it tasted even better!!

Tortilla Soup

Here's what you'll need...
2-3 chicken breasts, boiled and shredded
1 sm. onion, chopped
2 cloves minced garlic
4 oz. chopped green chillies
2 T. cooking oil
1 can of Ro-Tel tomatoes
1 can of pinto beans
1 can of white whole kernel corn
1 can of beef broth
1 can of chicken broth
1 1/2 c. of tomato juice
1 tsp. cumin
1 tsp. chili powder
1 tsp. salt
1 tsp. pepper
1 T. A1 sauce

Don't let the amount of ingredients scare you. It a very simple recipe.

Saute the onion, garlic and green chillies in the oil.
Add everything in a crockpot or cook on top of the stove. I usually cook mine on a medium low heat for about an hour. I don't add the chicken until the very end.
Serve with a dollop of sour cream, shredded cheese and tortilla chips.
