Saturday Night Justin and Joey opened up their beautiful new home to all of us for a "Sunday School Smores" party. Joey made some awesome Sour Cream & Chicken Enchiladas for dinner, and they had all the stuff for smores for dessert. After our delicious dinner we all hung around the fire, roasted our marshmallows, and ate our yummy smores.

We are definitely BIG dorks!!

They fire was dying down, so Justin fixed that problem really quick with a cup of gasoline!!

so much to blog about and not enough time

I'm still here!!!

I have just been so busy since my last post. I feel like I just can't get caught up in anything. I'm behind in school work. Our house is a mess. I'm behind in laundry. We have no groceries. And I haven't even blogged since last Monday.

I'm so behind in everything because two weeks ago I was out sick for 4 days with the flu. Last week I was out of the classroom on Monday for testing, felt like I was working double duty Tuesday, Wednesday and Thursday trying to catch up on all that I didn't do the week before, worked late every night having conferences with my parents, came home every night coughing and still feeling exhausted from my bronchitis and had to get sub plans put together once more because I took a personal day on Friday to celebrate our one year anniversary.

(I think that might have been a run on sentence.)

I have lots to catch you up on, so be looking for lots of new posts probably tomorrow.

Here was our wedding cake on our wedding day!!

And here is the top layer that I have kept frozen for the past year.

We were a little nervous about eating our one year old cake.

But after a whole year, it was still pretty moist and tasty.

It made me really hungry for some fresh wedding cake.

Good thing our next wedding is only 6 weeks away!! My friend I teach with is getting married on November 22nd!! Yay!!

On our way home from San Antonio we took a little detour to go meet our newest nephew.

He is so tiny. Every time I hold a newborn I forget how tiny they are. He is just precious!!

1st anniversary

I can't believe that it's been one whole year!!

I love you, Matt, with all my heart. It's been an amazing first year and I look forward to many more anniversaries shared with you.

sea world & saturday night

We drove out to Sea World Saturday morning after a yummy breakfast at our hotel.

Our first place to visit in Sea World was the dolphins. When we touched them, we both couldn't believe how they felt. It was so weird.

We bought some fish to feed the dolphins. The little fish were disgusting to hold, but it was really neat to have the dolphins swim right up to you to get their food.

After feeding the dolphins we head to a show.

These seals and walrus were so talented. I can't believe all the stuff they train them to do. Especially the walrus.......he was gigantic!!

We also went to an acrobat/beluga whale show. The acrobat part was a little cheesy, but the beluga whales were pretty cool. Again, I think it is so neat to see how well trained these animals are. It really is amazing.

Before we got to the penguin exhibit, I was complaining about how the penguin exhibit at the Dallas Aquarium is a joke. There were only 3 penguins and they were even very cute. And it stunk so bad. I was really thinking that this one would be a joke too. I was definitely mistaken. There were so many penguins in this exhibit. Most of them looked like little statues since it is nesting season. All the Daddy penguins were sitting on their little eggs. The picture looks a little funny because it was taken through the glass.

We spent a good 30 minutes just watching these seal. There were lots of people feeding them, so we decided to just watch instead of feeding them ourselves.

We were so entertained by watching them slide across the island and claim their "napping territory."

The last show that we went to for the day was Shamu!! Oh my word. That animal is amazing. The show was extremely cheesy, but Shamu was awesome!!

Sea World was such a fun experience. I'm glad we got to go!!

And of course, on our way home we had to stop for a Sonic Happy Hour drink. I hadn't had one in a couple of days. This girl can't go without her Sonic drinks!!

I was tired from all the walking around, and Matt gladly took me back to the hotel to take a nap because the Baylor Bears were playing football on TV!!

When the game was over we went to dinner at a Mexican Restaurant near the market called La Margarita.

We were so stuffed after dinner that we came back to the hotel and just chilled.

friday in san antonio

It was pouring down rain when we left Austin Friday morning. Since most of the things we wanted to do in San Antonio were outdoors, we decided to make a quick stop at the San Marcos outlet mall. We did a little bit of damage, but not too much, at a couple of stores. Shopping is definitely my kind of vacation!!

We arrived at our hotel, around 12:30. We got all checked in and then checked out our room.

It was really nice!!

Next on our agenda was lunch. It finally stopped raining, so we headed down to the Riverwalk to look for places to eat.

We decided on a place called "The County Line". Matt and I split a delicious barbeque platter.

Our next stop was to tour the Alamo. I had never seen it, so it was all pretty interesting to see. I thought it would be much bigger.

Matt's eyes are closed in this picture, but I didn't get any others of the Alamo, so it's going to have to stay!! (Sorry, babe.)

Since the weather had cleared up we decided to take a river tour. It was really neat to hear all the history of the Riverwalk, San Antonio, and all the buildings.

For dinner, one of my roommates in college suggested that we go to a restaurant called Boudros. The wait was an hour long for the first available table, but we stuck it out. While we were waiting we randomly ran into a girl that we used to go to Sunday School with. It's such a small world.

I was hoping we would get a table inside because it was pretty chilly outside, but we ended up sitting outside. I would have been miserably cold if I didn't have a jacket. Luckily it was worth being a little chilly because the food was really good.

Matt ordered a Prime Rib.

And I ordered a Grilled Seafood Platter.

I can definitely see why my roommate recommended this restaurant. I would totally go back.

We finished off the evening at Howl at the Moon. It is just like Pete's Dueling Piano Bar in Addison. I used to be a piano players, so I am so amazed at how well the pianist are. They know the words and the music to so many songs. It's really unbelieavable. While we were there Matt ran into a girl that he went to high school with. You really can't go anywhere without seeing someone you know.

We had a great time at Howl at the Moon, listening to dueling pianos music. It was definitely a fun day in San Antonio!!

pit stop in austin

To celebrate our one year anniversary Matt and I headed to San Antonio for the weekend. We left work a little early on Thursday and drove down to Austin to split up our drive to San Antonio and to see The Rocks.

We ate at none other than Chuy's for dinner. Even though we have a Chuy's in Dallas and Plano, it wouldn't be a trip to Austin without dinner at Chuy's. We love that restaurant. The first time I ever when to Chuy's was actually in Austin. I was hooked after the first visit.

After dinner we had some dessert at a place called Berry Cool. It is alot like Yogurtville. It was delicious!! These types of frozen yogurt places are popping up all over the place. I can't keep up with all of them.

It was a quick pit stop in Austin, but it sure was good to see some old friends.

Thanks Ian and Gina for letting us stay with you guys. We really enjoyed seeing ya'll!!

just call me an apple snob

When it comes to apples, I'm definitely an apple snob.

Why?

Because I love Honeycrisps and honeycrisps are only in season during the fall/winter. You will rarely find me eating apples during the spring or summer. I won't settle for anything less than the best, and honeycrisps are definitely the best. Once you eat a honeycrisp, you won't ever want to put another apple in your mouth.

The only problem with honeycrisps is that you have to pay a pretty penny for these apples. They range anywhere from $2.25 a pound to $2.99 a pound. Honeycrisps are huge, so they tend to be quite expensive.

Today happened to be my luck day. I was at Target grabbing a couple of groceries and look what I saw....

Honeycrisps for $1.49 a pound.

I got 8 apples today and still paid $6. If I would have paid full price it would have been $12 for 8 apple. It sounds crazy to pay that much for apples, but even when they are $2.99 I'll still buy them. I'll just turn my head when the cashier rings them up so I don't have to see how much I'm paying for them.

If you haven't ever tried a Honeycrisp apple, please go try one. But be prepared to become an apple snob once you try one.

a cup of fall

Matt and I went to our Sunday School class this morning, but decided to skip the worship service, since I'm still not feeling completely back to normal. On the way home Matt suggested that we stop at Starbucks.

I think we all know that I am a "Sonic Girl". I'm not really tempted by Starbucks at all. I don't even like coffee. But when the weather starts to cool down like it is, I'm a sucker for a Chai Tea Latte.

It really does taste like a cup of fall!!

I ended up staying home from school Monday-Thursday. After being back to school for just one day, I was ready for the weekend. The swine flu and bronchitis has really worn me out. The bronchitis is actually what is still lingering. I can't seem to get rid of it.

I've been resting on the couch literally all day today. Well.....except for a quick Sonic run!! I just have no energy to do anything. Thankfully, I've had someone to cuddle with!!

Izzie is not normally a cuddly dog. I guess she knows that her Mommy is sick and needs some love.

I'll be so glad when all this sickness is gone and I am back to 100%.
