This morning I woke up at what felt like the crack of dawn because of the time change to make this yummy breakfast casserole for our ABF.  We had breakfast duty today!!
Since Pearson has been sick, Matt stayed home with the little man while I went to church.  
(Don't mind the tape on Matt's glasses......Pearson broke them for the 2nd time a few weeks ago.  We had plans to go get him some new glasses this weekend, but our sick little boy changed those plans.)
It was so weird to go to church by myself, but since we had breakfast duty and I work in the preschool during the second hour I had to go without my boys.  
When I got home from church, Matt already had Pearson down for a nap, so we had a pretty lazy afternoon on the couch.  I spend some time pinning lots of Spring outfits on Pinterest. 
We were hoping to go to small group tonight, but Pearson woke up mad as a hornet and coughing again so we though it would be best to keep his little sick germs at home.  He spent some time relaxing on the couch watching "Memo" (Mickey).
And he did a little drawing on Mommy's paper with a pen.  It's so funny how drawing with a pen and on something other than a coloring book is soooooo much more enticing to him. 
And of course, after we made the decision to stay home, he perked up.  "Cah-kers" (Crackers) make this boy so happy!!
Since we were planning on being gone for the evening I had already put dinner in the crock-pot.  It was so nice to just continue relaxing and spending time with my boys while dinner was cooking away.  I made Slow Cooker Salsa Chicken Tacos.  This recipe is so easy and so yummy.  And my favorite part is always the leftovers.  I take the leftover chicken and make my Sour Cream & Cheese Enchiladas.  I usually just use plain chicken, so this Salsa Chicken adds an extra flavor that makes the enchiladas even better!!
After our normal night time routine of dinner, bath, playtime, and prayers, we put our little man to bed.  He cried and cried and cried.  He usually cries for a little bit, but tonight was way more than normal.  I definitely don't mind doing cry it out, but I felt really bad that he was crying for so long since he has been sick.  I went to go check on him and all he wanted to do was snuggle.  He even let me rock him.  I guess he is still not feeling 100%.  Poor baby. 
Matt and I finished our evening with some Girl Scout Cookies, Amazing Race, and The Bible.  Are you watching the 5 part series of The Bible on The History Channel??  It's so good!! I'm really enjoying it.

not what we had planned.....

We didn't have an grand plans this weekend, but I definitely hadn't planned on staying home with a sick baby all weekend.  Pearson started coughing Tuesday but it never really got any better.  I decided to take him to the doctor on Friday.  Kids always have a way of getting worse over the weekend so I wanted to make sure we saw the doctor on Friday.  I'm so glad I took him in because he ended up having Strep & RSV.  Poor baby.  I feel so bad that I didn't take him sooner, but he was never running a few so I just didn't know.  

We spent the majority of Friday snuggling and watching "Memo" (Mickey Mouse).  
 I knew that he really felt bad when he let me rock him to sleep for nap time.  He ended up taking a 3.5 hour nap.  That never happens!!
After a good day of rest yesterday, a good night's sleep last night, and three rounds of his antibiotic, I can definitely see that he is feeling better. It's crazy how fast kids can bounce back.  However, since we don't want to spread any germs and he still has a little cough we are going to lay low for the rest of the weekend.

chocolate glazed eclairs

Growing up, these Chocolate Glazed Eclairs were a specialty dessert.  My Mom always made them for our birthdays or special occasions.  They look so fancy that I always assumed that they were hard to make.  I decided to break down and make them myself a while back and OH.MY.GOODNESS. these are so easy to make.  The recipe is long and appears to be complicated but it is really not that difficult.  I took them to a dinner party and everyone was thoroughly impressed!!  So if you are looking for an easy dessert to impress a crowd, this is the dessert for you!!

Eclair Shells:
1/2 c. margarine
1 c. flour
1/4 tsp. salt
4 eggs
1 c. water

Filling:
1 sm. pkg. instant vanill pudding
2 c. milk
1 sm. Cool Whip

Chocolate Glaze:
1/2 c. (4 oz.) chocolate chips
1 c. powdered sugar
2 T.margarine
3 T. milk

**Don't get overwhelmed with all the directions.  I PROMISE this is not difficult.

Preheat oven to 350 degrees. Melt margarine in 1 cup boiling water. Reduce heat to low. With a wooden spoon, vigorously stir in 1 cup flour until mixture forms a ball and leaves sides of pan.  Remove from heat and cool a minute or two.  Beat eggs into mixture until thoroughly blended. When you start blending, you will think you totally screwed up.  It will look like a cottage cheesy mess, but just keep blending.  It will eventually be thick and smooth, with a satin sheen.  Drop mixture onto greased coolie sheet, 2 inches apart.  You can make 10 larges ones or about 20 small ones.  Smooth tops out with a spatula. Bake 40 minutes or until lightly brown.  Cut the shells in half (1/3 from the top) to let out steam and bake 5-10 minutes longer.  Do not under bake.  Cool before filling. 

Meanwhile, prepare pudding as directed on package.  Gently fold in Cool Whip.  Refrigerate until ready to fill shells.  Once shells have completely cooled and the filling has been refrigerated for a while, rill the bottom of the shell with filling. Replace tops.

In a smal saucepan over low heat, melt chocolate and 2 tablespoons margarine, stirring constantly.  Stir in 1 cup confectioners' sugar and 3 tablespoons milk until smooth. Drizzle chocolate over the shells and refrigerate.  

Note:  I like to just drizzle the chocolate since I'm not a huge chocolate fan, but when my Mom saw my eclair she said I needed more chocolate.  There is plenty of glaze to add way more chocolate than the picture shown above.  Just add however much chocolate glaze makes you happy!!

weekend recap

We had such a wonderful weekend this past weekend.  We started off our Friday Night with Parent's Night Out.  Matt and I normally go on a date for PNO, but this our ABF had a kid-free game night at The Gooding's house!  We had a blast with our ABF.  
We played a game called Mexican Scramble.  It was so fun!! It was kind of a cross between Spades, Hearts, & Bunco.  You play the game in partners, but it's kind of an individual game.  Just a little confusing, huh?  It was a bit confusing, but it was so fun.  Our brains were definitely hurting when we were finished because the rules are constantly changing in this game.

 Sadly Matt and I didn't win.  Even though we didn't win, it was so nice to drop all of our babies off at the church and enjoy some uninterrupted time with our friends.  And speaking of friends, great mind think alike, because Carissa and I were twinkies in our chambray shirts.  
We didn't get home from our game night until 10:30pm so Pearson stayed up way past his bedtime.  We were hoping that he would sleep in really late but he woke up around 8am.  We had lots of errands to run so we got out shortly after breakfast.  We stopped by to see P's cousin's and pick up our Girl Scout Cookies from our favorite little Girl Scout, Ellie!! We bought 5 boxes of cookies and we may or may not have devoured 2 of those boxes already!!
 After lots of errands and some shopping we met Grammy & Grandaddy for some lunch at Rudy's.
We only live an hour away from them, but we don't get to see them near as much as we would like too.  I'm so glad we were able to meet up with them for lunch.  Pearson sure loved seeing his Grammy & Grandaddy.  Grammy showed him how to put his applesauce lid on the straw and he had a ball playing a little balancing game.  
 After a late night on Friday and a long morning on Saturday, he crashed on the way home and slept on me until I transferred him to his crib.  
Sunday night after church we got together with our Small Group for dinner.  I didn't take a single pictures.  I have gotten terrible at taking pictures lately.  I don't ever use my big camera anymore, which is why this entire post is iPhone pictures.  I have got to get it out more because yesterday afternoon when the weather was so pretty I snapped this picture (with my big camera) of Pearson running around in our yard.  I can actually get picture of him moving with my big camera.  
Now if only we could get the weather to warm up and stay warm so we could have some more afternoons playing in the yard or going to the park!!

pin-spired #2

I'm linking up with Mel, Shay, & Sheaffer, to post a few outfits that I created this month using clothes I already had in my closet!!  
Here are the three outfits I created this month.  Looks like I had a chambray theme going on!!

Outfit #1: Chambray, Black & Brown

Here is a closer look at the necklace.  It says K (heart) M and underneath it says October 11, 2008 (our anniversary).  I actually won this necklace on a Giveaway from Mel's blog!!

I'm pretty sure we have all seen this pin floating around Pinterest.  This was the pin that actually inspired me to get a chambray shirt.  I just loved how it looked with black skinnies and brown boots. However the one I'm wearing in the pictures is from probably 5 years ago.  I bought it long before chambray was in style and it had actually in my garage sale closet for quite a while. I was digging through stuff I was going to sale to see if there was anything I could use to recreate outfits and this little beauty was saved and brought back to my closet!! 

Outfit #2: Mustard & Chambray

I have had this outfit pinned forever and I just now got around to putting it together.  I tried it with a white shirt, but it was a little to harsh contrast for me so I paired it with a teeny tiny white and navy pinstripe shirt.  It almost looks like a chambray shirt in the picture, but if you look closely it's stripes.  I put on some cute brown heels, and they looked cute, but I just couldn't pull them off.  I never wear heels.  I used to teach Kindergarten so they just aren't practical to wear to school.  And now I'm a stay at home mom......definitely not practical to wear around the house.  The only time I would wear heels would be at church, but I work during the 2nd hour at church in the preschool every Sunday, so I have to have comfy shoes.  I thought my brown boots still looked pretty cute with this outfit.

Last weekend when I was at Dot Mom, my friend wore purple and leopard together and it totally reminded me of this pin that I had pinned.  I immediately put this outfit together and wore it to church the next day!! It's obviously not exactly like the pin, but I love how the leopard and purple took together in my outfit!!

So there you have it!! 
I made 3 new outfits this month without setting foot in a store!!
