Whole30 {week 3 recap}

I'm a little late getting this up, but it was another successful week of Whole 30.  I'm really starting to feel that Tiger Blood and it feels so good!!!! Energy for dayzzzzzzz!!!

Day 18
Breakfast: Scrambled Eggs, Sauteed Potatoes with Red Peppers and Onions, 2 Slices of Bacon and Strawberries.
Lunch: Leftover Soup, Bananas with Almond Butter, Unsweetened Coconut and Chia Seeds, & Avocado
Dinner: Fish Fried battered with Coconut Flour and fried with Cocnut Oil and  Broccoli Slaw & Jicama Fries, Avocado, Raspberries

Day 19
Breakfast: Scrambled Eggs, Potatoes Sauteed with Red Peppers and Onions, Bacon, Salsa, & Raspberries
Lunch: Chicken Salad over Spinach, Plantain Chips, Avocado, Strawberries & Clementine
Dinner: Cracklin' Chicken, Sweet Potatoes, & Veggies

Day 20
Breakfast: Apple Sweet Potato Scramble
Lunch: Leftover Chicken Salad, Carrots & Guac Pack, Plantain Chips, Raspberries, & Applesauce
Dinner: Sweet Potato Nachos & Fruit Salad

Day 21
Breakfast: 2 Fried Eggs over Spinach, 1/2 Chicken Apple Sausage, & Cantaloupe 
Lunch: Leftover Cracklin Chicken, Steamed Veggies and Sweet Potato
Dinner: Terriyaki Chicken & Cauliflower Rice & Cantaloupe 

Day 22
Breakfast: Mixed Berry, Spinach, & Larabar
Lunch: Salad topped with Taco Meat, Avocado, & Salsa, Steamed Veggies,  Strawberries
Dinner: Chicken Apple Sausage sautéed with onions, spinach and Rotel over Cauli-Rice

Day 23
Breakfast: Scramble Eggs with Spinach and Orange Bell Peppers
Lunch: Egg Roll in a Bowl and Applesauce with Cinnamon
Dinner: Angus Beef Burger topped with Sauteed Onions and Fried Egg & Rosemary Sea Salt Fries

Day 24
Breakfast: Boiled Egg, Key Lime Pie Larabar, & Banana
Lunch: Leftover Egg Roll in a Bowl and Apple with Almond Butter
Dinner: Date Night at Mercados, Combo Fajitas (cooked with no butter) onions, peppers, guacamole, salsa, and plantain chips.

Whole 30 {week 2 recap}

Another week of Whole30 is in the books.  I'm so proud of myself for making it this far!! Days 11 and 12 were kind of hard because I was feeling bloated and wondering if this was even working.  But Day 13 came and I was feeling much better.  Each day I feel like my energy level has increased and I really am feeling great.  My jeans are fitting looser, so I can only assume I have lost some weight, but honestly I don't really care about the number.  The way I feel is so much more important than a silly number on a scale to me.  I'm doing this to feel good and that's just how I feel!!

Here's what I have been eating this week! 

Day 11
Breakfast:

Day 12

Banana, Orange, Almond Milk, Nutmeg Smoothie

Leftover Butternut Squash Soup, Grilled Chicken, Jicama Slices, Guac, & Grapes
Dinner:
Stuffed Poblano Peppers, Plantain Chips & Homemade Salsa (minus the sugar), & Avocado

Day13
Breakfast:
Chicken Apple Sausage, Spinach, & Onion Egg Scramble, Avocado, & Grapefruit
Lunch:
Chick-fil-A Grilled Nuggets, Fruit Cup, Carrot Chips, Quac, & Applesauce Pouch
Dinner:
Oven Baked Fajitas & Salad with Homemade Salsa

Day 14
Breakfast:
Chia Seed Pudding with Banana, Unsweetened Coconut Flakes, & Cinnamon

Weight Watchers Cabbage Soup, Pineapple & Kiwi

Day 15

2 Fried Eggs over Spinach, Leftover Stuffed Pepper Stuffing, & Pineapples

Grilled Chicken Salad with Dried Fruit, Apple Chunks, Pecans, & Tessemae's Balsamic Dressing

Day 16

Chicken Apple Sausage, Onion, & Spinach Egg Scramble, & Apple Bake
Lunch:
Cobb Salad at Newk's (no cheese or croutons) with Tessemae's Zesty Ranch
Dinner:
Dakota's Steakhouse- Chop Salad (no cheese) with Tessemae's Balsamic Dressing, 8oz Filet Mignon, Baked Potato, & Asparagus (all cooked without butter)

Day 17
Breakfast:
1 1/2 Boiled Eggs, 1/2 banana & Carrot Cake Larabar

nash {23 month}

Measurements: 
Officially weighed 31.9lbs at the doctor.
You are wearing 2T footie PJ's and some 3T tops and bottom PJ's.  Clothes are mainly 2T with a few 3T hand me downs.  You are in size 5 diapers and size 8 shoes. It just depends on the brand though.  


Sleeping: 
Napping from 1-4pm and sleeping at night 7:30-7:30.  You are a great napper still.  You go down so easily.  You are ready to go to sleep when I lay you down.  We had a few rough nights this last month with being out of town for a week over Christmas and then an ear infection.  If I lay on your floor beside you bed you almost always go back to sleep.  

Eating:
You still love to eat! You love potatoes, tacos, french fries, cheese. You love all fruit especially bananas, apples, grapes and oranges.  You are a little cleaner upper and finish whatever anybody doesn't finish on their plate.  It's impossible for us to have anything different on our plate than yours.  If we have something you don't, you want it!!

New Tricks/Activities/Accomplishments: 
Follow directions really well. Count to three. Talking in sentences and saying so much.

Eeek! I need to check.  I have no idea if your molars have come in or not.  

Likes:
Doing whatever brother does, running, jumping, wresting, trucks & cars, school buses, Mickey Mouse, balls, coloring and eating!

Dislikes:
You hate taking brother to school.  You don't like brushing your teeth or getting your hair fixed.  You don't like when we offer you the wrong thing you are asking for.  You don't like being locked up in the playroom by yourself.  You don't like when we won't get your paci out of the crib. 
Other Random Facts:
  • You have started calling yourself "Nashy" or "Nashy-Noo" because that's what we call you a lot.  
  • For a while you were calling milk "milp", but now it's "milt".
  • You love Mickey Mouse and can spot him on things all the time. 
  • You say "Ouch" all the time.  If I get hurt you say out for me, if Pearson barely touches you, you say Ouch.  We never know if you are crying wolf or actually hurt because you say it all the time.  
  • You love to snuggle! I still get to rock you for a little bit every night. 
  • You LOVE the John Deer power wheels we got you guys for Christmas.  You still need some help driving it, but you like it way more than Pearson does.  
  • You run so so fast.  If you get away from us, we really have to chase you. 
  • You are a true copy cat.  If brother does it, then you will shortly follow.  Good or bad, you want to be just like your brother.  
  • That's all I have for this month.  With the holidays, I didn't write much down.

whole 30 {week 1 recap}

The first full week of Whole 30 is in the books.  Actually I'm a third of the way through since I have completed 10 days!! I am already noticing some Non Scale Victories.  If you aren't familiar with the Whole30 Program, you are not suppose to weigh yourself for the entire 30 days.  The reason for this is because it's not about weight loss.  If I were to look at the scale and see that I hadn't lost weight,
I might overlook some of the other great things that are happening with body.  

Most people feel like they have a hangover or what lots of people call "the carb flu" during the first few days.  Surprisingly, I never really felt bad.  I had a few little headaches during the day, but I think they were mainly because I was hungry.  On Day 6 and 7 I was really struggling though.  All I wanted to do was take a nap.  In fact, I did take a nap both of those days and went to bed around 9pm.  Day 8 my energy really started to pick up and by Day 10 I was really starting to feel good! I can't wait to see how I feel by Day 30!!

Day 4
 Breakfast:
Smoothie (Frozen Banana & Pineapple, Almond Butter, Spinach, Chia Seeds & Water)

Lunch:
Leftover Chicken Salad on Lettuce Boats, Avocado & Pineapple

Diner:
Aidell's Chicken Apple Sausage, Sweet Potatoes & Brussel Sprouts, & Side Salad with Dump Ranch

Day 5
  Breakfast:
Bacon Wrapped Egg Cups, Leftover Rosemary Potatoes, & a Clementine

Lunch:
Leftover Chicken Salad,  

Dinner:
BLT Boats with homemade mayo, Carrots & Dump Ranch, & Pineapple

Day 6
 Breakfast:
Egg Scramble (2 eggs, Aidell's Chicken Sausage, & Spinach) and a Clementine

Lunch:
Chick-fil-A Grilled Chicken Nuggets, Fruit Salad, Guacamole & Carrots. 

Dinner:
Chili and Fruit Salad

Day 7
  Breakfast:
Leftover egg cups & fruit salad

Lunch:
1.5 Boiled Eggs, Leftover Sweet Potatoes & Brussel Sprouts,  & half of an Apple with Almond Butter

Dinner:

Day 8
  Breakfast:
2 Fried Eggs cooked in coconut oil over spinach & Clementine

Lunch:
Leftover Chili & Apple with Almond Butter

Dinner:
Kalua Pork, Sweet Potato with ghee and cinnamon, Steamed Broccoli, Carrots & Cauliflower

Day 9
  Breakfast:

Lunch:
Leftover Chili, Oranges,  & Grapes

Diner:
Leftover Kalua Pork over Baked Potato with ghee and Coleslaw

Day 10
 Breakfast:
Leftover Fritatta (Broccoli, Sweet Potatoes, & Bacon), Banana, & Apple Pie Larabar

Lunch:
Leftover Cauli-Rice, Leftover Salsa Chicken, Salsa, Guacamole, Plantain Chips, & Kiwi

Diner:
Outback Steakhouse- 6oz Sirloin, Sweet Potato, & Steamed Mixed Veggies

Whole 30 {1st Weekend}

I posted this on Facebook New Year's Eve…..

I've been hesitant to post this mainly because I'm really nervous about being successful at this challenge and I really hate "Weightloss New Year's Resolutions". But this isn't a weightloss program and its not a diet. It's a lifestyle change and I know I need the accountability to be successful so here goes........

I'll be joining in on the ‪#‎whole30‬ craze January 1st. I'll be eating nothing but whole, nutrient-dense, unprocessed foods for 30 days......basically a detox from all the crap I have been eating or a nutritional reset.

I first heard about #whole30 from my friend at Loved and Lovely and was intrigued. It sounded awesome but also looked really hard. Later on a friend here in Tyler 
posted all her meals during her Whole30 on Instagram. When I saw that a busy Mom of three could do it, there was no reason I couldn't do it to. I've been reading, researching, pinning, planning and shopping for this for the last few months so hopefully I can be successful and see some great ‪#‎nonscalevictorys‬ and maybe shed the 10ish lbs I've gained since moving to Tyler.

I'm going to go ahead and apologize for all the food pics I will be posting in the next 30 days. I need the accountability and if I have to post each meal, I'll be sure to make it ‪#‎whole30compliant‬.

Since I started on a Friday, I am going to recap the weekend.  And then next week I will just recap the entire week!

Day 1
Breakfast:
2 Fried Eggs cooked in Coconut Oil, 2 Pieces of Costco No Sugar Added Bacon & Banana with Costco Almond Butter, Wild Oat Unsweetened Coconut & Aldi Chia Seeds.

Lunch: 
Trader Joe's Chili Lime Chicken Burger over Spinach topped with Costco Guacamole Pack, Spiralized Baked Sweet Potatoes seasoned with s/p, paprika, garlic powder and onion powder, grapes & kiwis.

Dinner: 
{Disgusting} Balsamic Herb Chicken, Rosemary Potatoes, & Birdseye Steamed Broccoli & Cauliflower

Day 2
Breakfast:
Chia Seed Pudding topped with bananas, Wild Oat unsweetened coconut,  and cinnamon (3T of Chia Seeds soaked overnight with 1 cup of almond milk and spoonful of Costco Almond Butter) 

Lunch:
Grilled Chicken Cobb Salad with Dump Ranch, Pineapples & Grapes

Dinner: 
Zuchinni Noodles over Ground Turkey in Aldi Basil Tomato Sauce, Roasted Brussel Sprouts 

Day 3
Breakfast:
Boiled Egg and Pumpkin Spice Larabar

Lunch: 
Chicken Salad (Homemade Mayo, Shreded Chicken Breast, Diced Celery & Apples, Costco Super Berry Fusion Dried Fruit, Chopped Pecan, Minced Onion, Dried Parsley, s/p, Trader Joe Plantain Chips, & Pineapple

Dinner:
Leftover Zoodles & Meatsauce, Leftover Roasted Brussel Sprouts, Clementine & Lemon Bar Larabar

I am actually shocked at how well the Whole30 is going.  Surprisingly, I haven't had a bad headache yet from the lack of sugar and my daily Diet Coke.  Most people report they feel awful by Day 3 but I don't yet. Maybe it's coming, but right now I am actually enjoying preparing my healthy meals and I really look forward to each meal.

hello (sang like adele)

Sorry if I just got that song stuck in your head, but I'm constantly singing it and I can't say Hello with out trying to sound just like Adele! 

Anywho….I'm way behind on blogging.  Like way way way behind.  I have never been this far behind.  I have spent pretty much all of 2015 saying I would catch up and I just never really have.  Just when I was starting to get back into the swing of things in May, we moved and then my Dad was in a car accident which later caused a massive stroke.  Those two events have just completely changed my life and I just haven't really been myself.  I used to love blogging but sitting down to write has just been the last thing I have wanted to do lately. It's been a really hard year to say the least.  

Here's to trying to actually catching up on my blog.  
(I still haven't even blogged Nash's 1st birthday and that was almost a year ago.)

Here's to 2016 being better than 2015.

nash {22 months}


Measurements: 
I need to weigh you.  You have got to be over 30lbs by now.  You are SO heavy.
You are wearing 2T footie PJ's and some 3T tops and bottom PJ's.  Clothes are mainly 2T with a few 3T hand me downs.  You are in size 5 diapers and size 6, 7 or sometimes 8 shoes. It just depends on the brand.  


Sleeping: 
Napping from 1-4pm and sleeping at night 7:30-7:30.  You've been taking awesome naps this month and even sleeping in some mornings.  Sometimes just until 8am, but a few times until almost 9am.  You must be growing!

Eating:
Gosh kid.  You eat so much.  And you literally eat everything.  Well, there are a few things you won't eat, salad, brussel sprouts, and broccoli, but that's probably pretty normal for a kid to not like those! As always you always out eat your brother, and lately you have been finishing his plate off after he is done.

New Tricks/Activities/Accomplishments: 
You can recognize all of your body parts (hair, eyes, ears nose, mouth, tongue, tummy, belly button, fingers, feet, knees, elbow, wrist.) You know lots of animal sounds (bird, duck, cow, pig, horse, dinosaur, lion, bear, snake, chicken, dog, cat, elephant, monkey, donkey, goat) You are saying lots of sentences and SO many new words.  I have not even kept a record but it's insane how many words you know.  You know all of our family members names and even your own name!

Same ole, same ole.  Diaper changes, brushing teeth, combing hair, getting in the carseat, holding our hands when walking, when brother gets to do things and you don't.  You also do not like Tuesday when Brother is at school all day.
Other Random Facts:
  • This month you woke up some during the night.  If we just go in your room and lay on the floor for a minute, you go right to sleep without us doing anything else.  
  • If any of us don't finish eating our meal, you are always quick to say "I want it."  You will gladly finish off everyones plates!
  • You love to show us your belly button.  We laugh because you call it a "butt".  And you like to pull up our shirts and say "I see you butt"! Ha!!
  • One time we were out shopping and you saw a cat but you kept calling it a "Yow" because cats say Meow!
  • Pearson loves to ask you to repeat words.  He'll say "Nash can you say basketball?" and you always give it your best shot.  
  • When we are out driving and we stop at a red light or stop light.  If we are there too long you will yell from the back seat "Goooooooo".
  • We still have you rear facing and I don't plan on switch you yet because you still take great naps in the car when we travel back and forth to Dallas.  
  • You still have your paci at bedtime and nap time and when we are in the car driving to Dallas.  You have become very addicted to it lately.  Sometimes you will sneak in your room and reach your arms in your crib to sneak your paci.  You also really love your lovies.  You have to have all three of them at bedtime but you love the one Jenica made you the best.  
  • Every Sunday morning we ride the bus from the remote parking to the church building.  You smile the entire time and talk about the buses all the time.  Any time we go to Green Acres for something else you get so sad that we aren't riding the bus.  
  • You actually fell out of the crib once this month.  You hoisted yourself over the top and it didn't really scare you at all, which actually really scared me.  Now when I lay you down, I always have the monitor right by my side and I watch you like a hawk until you lay down. Sometimes you try to hike a leg over the top but you haven't ever tried really hard to get out again so hopefully we can keep you in your crib for a lot longer!!
  • When you see letters or numbers they are all E, O or 8. 
  • You love to play peek a boo but you always say "I see you!" in the sweetest highest voice.   
  • You already ask us Why? all the time.  
  • Anytime I say "Oh my" or "Oh no" you will alway ask "What?" like you really want to know what I was talking about!
  • You call your elbow an "elmo".
  • Anytime you want something you always say "I want two".  You don't really mean that you want two.  You just say that because typically Pearson says "I want milk" then you say "I want milk too".  So now anytime you want something, even if you aren't repeating after Pearson you say "I want too".
  • Every night when I put you to bed, we sit in your chair and I say "Let's say prayers".  You hold your hands together while I pray and at the end you always say a big "A-meeeee"
  • You started saying I LOVE YOU (I wub you!) and it just melts our hearts.

nash {21 months}

Oh sweet Nash! Mommy has been such a slack this year with blogging.  Even when I have taken blogging breaks, I have never missed yours or your brother's monthly posts.  Sometimes they are a tad late, but they have never been skipped.  I totally dropped the ball on your 21 month post.  I did take these pictures of time.  The post just never got written.  Between you having an ear infection and not sleeping well, then Mommy having an upper respiratory infection, traveling for Thanksgiving, the the start of the Christmas season and Christmas shopping, it just didn't get done.  I'm sorry, love.  Here's a few snippets about you at 21 months, but I'll make your 22 month post heavy to make up for it!

thanksgiving 2015

This year Thanksgiving was with my family.  I knew when we moved that Thanksgiving would be different for us this year.  I knew it would involve a road trip and an overnight stay.  But after my Dad's stroke, we didn't even really know if we would be "home for the holidays".  Dad was in in-patient therapy at a few different places up until about a week before Thanksgiving.  We were so incredibly thankful to be able to all be at parents house to celebrate Thanksgiving.  
Mom made about half of the food and Nonnie made the rest.  The boys and I went to Dallas early on Monday morning but I didn't get to help Mom cook as much as I wanted to, because I had an upper respiratory infection.  I ended up at the doctor on Wednesday to get a steroid.  We kept things simple with throw away pans and what we call "fine china"(chinette plates). We didn't care though.  It all tasted so good!!

 After a delicious lunch, all the guys settled in the living room to watch the Cowboys, I put Nash down for a nap and the rest of us walked over to Nonnie's house to say hi!
 Usually we have Thanksgiving lunch at my grandma's house all together, but with Dad's stroke, he gets a little unsettled with craziness.  We thought our crazy kids would be enough, so we opted to do our own thing away from all my aunts and uncles and cousins.  I'm thankful my grandma lives across the street from my parents though so we were still able to see them.  
I really enjoyed being a guest at my parents house rather than just coming over for lunch.  After the game, we did a few crafts with Pearson, ate some leftover and then Mom and I did some Black Friday shopping.  
 Actually, we did quite a bit a Black Friday shopping.  We staying up past midnight shopping on our iPads.  That's the best Black Friday shopping there is.  You couldn't pay me to go wait in a line or mess with the crowds.  This is definitely the way to go!!
Friday morning, we headed to Sherman to visit Matt's parents.  We don't normally all get together for Thanksgiving when its our "off year" but everyone happened to come over so we all played some domino train.  It wouldn't be a Link Family gathering without it!
 And of course, these two sweet cousins always have the best time when they are together.  Nash was sleeping, but he love Big Ethan too!
